I can’t believe the amount of time I’ve wasted not enjoying salads. Given the right dressing and accoutrements, salads can bring greater flavor to what is already filled with delicious textures.

Dressing doesn’t have to just apply to your traditional salads, either. Using it on roasted root vegetables and also bring more life to a dish you thought you already knew.

Here is my version of a feta dressing, based on the whipped feta recipe from Serious Eats. However, I’ve taken it a step farther and added three different ways you can adapt the recipe to different vegetables and tastes.

Whipped Feta Dressing

Makes 1 pint

  • 1 individual-sized container of Greek yogurt

  • 8 ounces (225 g) of Feta

  • 1 garlic clove, microplaned

  • 2 tablespoons olive or avocado oil

  • 2-3 tablespoons of water

  • Salt and pepper

Procedure:

  1. Combine all ingredients and blend until smooth using either a blender, a food processor, or an immersion blender. Add more water if necessary to have a thinner dressing.

  2. Season your dressing with salt and pepper to your preferences.

Lemon-Za’atar Feta Dressing

Za’atar is one of my favorite spice blends. You can make your own by following the link here, or you can likely find a mix at your local grocery store.

This Middle Eastern variation on your whipped feta would be an especially delicious addition to roasted root vegetables. Add the zest of 1-2 lemons and a tablespoon and a half of za’atar to the liquified feta. Add the mixture to your vegetables liberally.

Smoky Spanish Dressing

I love Spanish flavors so much! They are vibrant and easy to achieve in this recipe. Replace one of the tablespoons of water with some sherry vinegar, and add a tablespoon of smoked paprika to your dressing. This would be excellent in a salad with maybe some melon and some bacon bits as additions for extra crunch and flavor.

Dill Weed Dressing

If you’ve never been introduced to dill weed, know that it is better late than never. Dill powder is concentrated and zesty. It’s a perfect complement to the feta in this recipe, and this combination will rival your favorite ranch. Add the dill weed a teaspoon at a time to your feta dressing to taste. Some sunflower seeds and tomatoes will bring out the best in this winning combination!
